One of our favourite specials to make on the farm, the syrup is an ideal accompaniment to this warm, buttery cake. It’s simple, but an absolute crowd pleaser.
Ingredients
125g butter chopped
1 tsp vanilla extract
1 cup caster sugar
2 eggs
1 cup SR Flour
¼ cup custard powder
½ cup milk
Bridestowe Gourmet Lavender & Rhubarb Syrup
Method
Combine all ingredients in bowl of electric mixer and beat on medium speed till smooth and pale. Pour into greased and lined 7 inch square tin and bake at 170 degrees for 35-40 mins.
While hot, pour over 3 or 4 tablespoons of our Bridestowe Gourmet Lavender and Rhubarb Syrup.
Allow 10 minutes to soak in. Cut into squares, serve warm with more syrup and double thick cream.
