Almond and Lavender Friands

Ingredients:

180g butter
200g icing sugar
60g plain flour
120g almond meal
5 egg whites
1 teaspoon Bridestowe gourmet Culinary Lavender

Method:

Melt the butter and allow to cool. Crush the Culinary Lavender with a pestle and mortar or grind with 1 tablespoon of the icing sugar in a spice or coffee grinder. Sift the icing sugar and flour into a bowl. Add the Culinary Lavender.

Lightly beat the egg whites until frothy and fold into the dry ingredients.

Grease 10 friand moulds (or regular patty pans) with 1 tablespoon of the melted butter. Gently stir the remaining melted butter into mixture until well combined.

Spoon the batter into the moulds until ¾ full. Bake at 200°C for 10 minutes. Turn the tray around and bake for a further 10 minutes or until the friands spring back when touched.

Cool on a wire rack. When cool, dust with icing sugar.

Try serving with a drizzle of Bridestowe gourmet Lavender Syrup!
