A Bridestowe classic, our sausage rolls are a favourite amongst customers and staff alike.
Bridestowe Sausage Rolls

750g sausage meat
1 small zucchini
1 small onion
1/2 teaspoon garlic (or garlic powder)
1 teaspoon Bridestowe gourmet Herbes de Provence
2 tablespoons breadcrumbs
1 tablespoon ketchup
1 30x30cm sheet puff pastry
1/4 teaspoon salt
1/4 teaspoon pepper
Preheat oven at 180°C.
Remove puff pastry from freezer and allow to defrost.
Lightly beat egg and divide in half.
Place the sausage meat into a large mixing bowl and finely grate the carrot, zucchini, onion and garlic into the bowl. Add Herbes de Provence, breadcrumbs, ketchup, salt and pepper and half of the beaten egg. Combine thoroughly. Mix one tablespoon of cold water into the remaining egg.
Cut your square sheet of puff pastry in half creating two 15x30cm rectangles.
Arrange sausage mixture in two long columns – one along each of the pastry rectangles, leaving 1-2cm border of pastry on the left side, and a wider amount of pastry on the right.
Brush a small amount of the egg wash along the right side of the pastry. Roll the left side onto the right, using the egg wash to seal the two sections of pastry together. Trim excess pastry. Slice each roll into 3 x 5cm sausage rolls. Place onto a lined baking tray with the seam of the pastry facing downwards.
Brush top of each roll with egg wash. Bake in a hot oven for 15 minutes, or until pastry is lightly golden.
