Roast Pumpkin, Feta and Spinach Quiche

150g cubed pumpkin
5 small spinach leaves
1 diced onion
1 clove crushed garlic
200g cubed feta
1/2 cup cream
Bridestowe gourmet Pepper Plus
1 sheet puff pastry
Coat pumpkin in oil and Pepper Plus and bake until soft.
Saute onion and garlic.
Whisk eggs, cream and Pepper Plus (to taste).
To assemble, put spinach and onion on puff pastry base.
Add pumpkin and feta. Sprinkle with chives.
Pour egg mixture over all ingredients.
Bake for approximately 45 minutes in a 180°C oven.
